Chicken in Creamy Cilantro Sauce

Ingredients

  • 2 (9-oz) pkg refrigerated fettuccine
  • 6 (6-oz) boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 2 tsp minced garlic
  • 2 Tbsp lime juice
  • 1½ cups heavy cream
  • 1 cup chicken broth
  • 1 cup shredded Monterey Jack cheese
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, season chicken with salt and pepper, if desired. Cook chicken in hot oil in a large skillet over medium-high heat until browned; remove from skillet.
  3. Add garlic; cook 30 seconds. Add lime juice, scraping up browned bits from bottom of pan with a wooden spoon.
  4. Stir in cream and broth. Return chicken to skillet, and cook 5 minutes or until chicken is done and sauce is thickened. Remove chicken from skillet; keep warm.
  5. Gradually stir cheese and cilantro into sauce mixture. Toss with pasta; divide among 6 plates. Top with chicken.
