Shrimp and Guacamole Tostadas

Ingredients
- 2 lb peeled and deveined, large raw shrimp
- 2 Tbsp Southwest seasoning
- 2 Tbsp olive oil
- 1 (12-count) pkg crispy tostada shells
- 1 (16-oz) carton guacamole
- 1 (10-oz) carton pico de gallo
- 4 radishes, thinly sliced
- ¾ cup crumbled feta cheese
- 2 Tbsp chopped fresh cilantro
Instructions
- Toss shrimp with seasoning. Cook shrimp in hot oil in a large nonstick skillet over medium-high heat until shrimp are done.
- Meanwhile, heat tostada shells according to package directions. Spread guacamole over warm tostadas; top with shrimp, pico de gallo, and radishes. Sprinkle with cheese and cilantro. Serve immediately.

- 2 (8.8-oz) pouches microwavable long grain white rice
- 2 Tbsp butter
- ½ cup sour cream
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp lime zest
Side Dish Instructions
- Heat rice according to package directions. Stir in butter, sour cream, cilantro, and lime zest.
