Shrimp and Guacamole Tostadas

Ingredients

  • 2 lb peeled and deveined, large raw shrimp
  • 2 Tbsp Southwest seasoning
  • 2 Tbsp olive oil
  • 1 (12-count) pkg crispy tostada shells
  • 1 (16-oz) carton guacamole
  • 1 (10-oz) carton pico de gallo
  • 4 radishes, thinly sliced
  • ¾ cup crumbled feta cheese
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Toss shrimp with seasoning. Cook shrimp in hot oil in a large nonstick skillet over medium-high heat until shrimp are done.
  2. Meanwhile, heat tostada shells according to package directions. Spread guacamole over warm tostadas; top with shrimp, pico de gallo, and radishes. Sprinkle with cheese and cilantro. Serve immediately.

  • 2 (8.8-oz) pouches microwavable long grain white rice
  • 2 Tbsp butter
  • ½ cup sour cream
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime zest
