One-Dish Dinner
Smothered Cowboy Potatoes

Ingredients
- 1 (32-oz) pkg frozen deli style seasoned potato wedges
- 1½ lb ground beef
- 1 (10-oz) can enchilada sauce
- 1 (8-oz) pkg shredded Mexican blend cheese
- 1 (8-oz) carton sour cream
- 1 cup pico de gallo
Instructions
- Bake potato wedges according to package directions.
- Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain, and return to skillet. Stir in enchilada sauce; cook 2 to 3 minutes or until thoroughly heated.
- Increase oven temperature to broil. Spoon beef mixture over potatoes; sprinkle with cheese. Broil 1 to 2 minutes or until cheese is melted.
- Top with sour cream and pico de gallo.
