Coconut-Pomegranate Overnight Oats

Ingredients

  • 1½ cups old fashioned oats 
  • 2 Tbsp chia seeds
  • ½ tsp cinnamon 
  • 1½ cup unsweetened vanilla almond milk, divided 
  • 2 (5.3-oz) cartons coconut flavored Greek yogurt, divided 
  • ½ Tbsp vanilla extract 
  • ½ cup pomegranate arils
  • 1 Tbsp honey 

Instructions

  1. Combine oats, chia seeds, cinnamon, 1 cup milk, 1 carton yogurt, and vanilla; cover, and chill overnight.
  2. Stir ½ cup milk into oats. Spoon into 4 bowls, top with 1 carton yogurt, pomegranate, and honey.
