Coconut-Pomegranate Overnight Oats

Ingredients
- 1½ cups old fashioned oats
- 2 Tbsp chia seeds
- ½ tsp cinnamon
- 1½ cup unsweetened vanilla almond milk, divided
- 2 (5.3-oz) cartons coconut flavored Greek yogurt, divided
- ½ Tbsp vanilla extract
- ½ cup pomegranate arils
- 1 Tbsp honey
Instructions
- Combine oats, chia seeds, cinnamon, 1 cup milk, 1 carton yogurt, and vanilla; cover, and chill overnight.
- Stir ½ cup milk into oats. Spoon into 4 bowls, top with 1 carton yogurt, pomegranate, and honey.
