Ingredients

  • 4 slices center cut bacon, chopped
  • ⅓ cup chopped onion
  • 2 cloves garlic, minced
  • 2½ cups frozen cubed hash browns, thawed
  • ¼ cup chopped fresh parsley
  • 8 large eggs
  • ½ tsp salt
  • ¼ tsp crushed red pepper
  • ½ cup freshly shredded reduced fat Cheddar cheese
  • 2 small Roma tomatoes, sliced

Instructions

  1. Preheat oven to 350°F. Cook bacon in a large cast-iron skillet over medium heat until crisp; drain bacon on paper towels, reserving drippings in skillet.
  2. Sauté onion and garlic in hot drippings 3 to 4 minutes until tender. Remove from heat, and stir in hash browns, parsley, and bacon.
  3. Whisk together eggs, salt, and red pepper. Pour over bacon mixture, and sprinkle with cheese. Top with tomatoes.
  4. Bake 15 to 20 minutes or until eggs are set and top is golden.
