Pulled Pork-Mashed Potato Bowls
Romaine-Celery-Apple Salad
Ingredients
- 2 (24-oz) pkg refrigerated mashed potatoes
- 2 (16-oz) container seasoned and fully cooked pulled pork with sauce
- 1 (8-oz) pkg shredded Cheddar cheese
- 4 green onions, sliced
- 1 (8-oz) carton sour cream
Instructions
- Heat potatoes according to package directions; season with salt and pepper, if desired.
- Heat pork according to package directions.
- Layer potatoes, pork with sauce, and cheese in 6 shallow bowls. Top with onions and sour cream.
Side Dish Ingredients
- 2 (10-oz) pkg chopped romaine lettuce
- 2 stalks celery, sliced
- 1 Honeycrisp apple, chopped
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients just before serving.
