Blue Cheese Chicken
Cobb Side Salad
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 1½ Tbsp olive oil
- 3 Tbsp whole buttermilk
- 2 Tbsp sour cream
- 1 tsp lemon juice
- ½ tsp dry mustard
- 1 clove garlic, minced
- ⅔ cup crumbled blue cheese
Instructions
- Sprinkle chicken with ½ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, whisk together buttermilk, sour cream, lemon juice, mustard, ¼ tsp each salt and pepper, and garlic. Fold in cheese. Serve sauce with chicken.
Side Dish Ingredients
- 2 large eggs
- 4 slices center cut bacon, chopped
- 1 (10-oz) pkg chopped romaine lettuce
- 2 tomatoes, cut into wedges
- 2 avocados, sliced
- ½ cup red wine vinaigrette
Side Dish Instructions
- Place eggs in a single layer in a saucepan. Add water to cover; bring a boil. Remove from heat; let stand, covered, 15 minutes. Drain and run cold water over eggs; peel and chop.
- Meanwhile, cook bacon in a skillet over medium heat 6 minutes or until crisp.
- Divide lettuce among 6 plates. Top with tomatoes, avocados, eggs, and bacon; drizzle with vinaigrette.
