Ingredients

  • ½ cup chopped onion
  • 2 Tbsp olive oil, divided
  • 1 cup brown rice, rinsed
  • 2 cloves garlic, minced
  • 1 tsp ground turmeric
  • 2½ cups water
  • ¾ tsp salt, divided
  • 1½ lb boneless, skinless chicken breasts
  • 1 Tbsp smoked paprika
  • 1½ tsp ground cumin
  • ¼ tsp pepper

Instructions

  1. Sauté onion in 1 Tbsp hot oil in a medium saucepan over medium-high heat 4 minutes or until almost tender.
  2. Stir in rice, garlic, and turmeric; cook 1 minute. Add water and ¼ tsp salt; bring to a boil. Cover, reduce heat, and simmer 40 minutes or until rice is tender and liquid is absorbed.
  3. Meanwhile, sprinkle chicken with paprika, cumin, ½ tsp salt, and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium heat 5 to 6 minutes per side or until done. Serve chicken with rice.

  • ¼ tsp salt

  1. Toast nuts in a dry skillet over medium heat until fragrant.
  2. Whisk together oil, vinegar, honey, mustard, and salt in a large bowl. Add spinach, pears, and nuts; toss.
