Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut in half lengthwise
  • 2 Tbsp all purpose flour
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup lemon juice
  • ¼ cup less sodium chicken broth
  • 3 Tbsp drained capers
  • 1 Tbsp butter
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with flour, salt, and pepper.
  2. Cook chicken, in two batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from pan.
  3. Add lemon juice and broth to pan, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
  4. Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened.
  5. Spoon sauce over chicken; sprinkle with cheese.
