Parmesan Chicken Piccata

Ingredients
- 1½ lb boneless, skinless chicken breasts, cut in half lengthwise
- 2 Tbsp all purpose flour
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¼ cup lemon juice
- ¼ cup less sodium chicken broth
- 3 Tbsp drained capers
- 1 Tbsp butter
- ¼ cup freshly grated Parmesan cheese
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with flour, salt, and pepper.
- Cook chicken, in two batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from pan.
- Add lemon juice and broth to pan, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
- Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened.
- Spoon sauce over chicken; sprinkle with cheese.
