Turkey Cottage Cheese and Egg White Wrap

Ingredients

  • 1 cup 2% small curd cottage cheese
  • ⅓ cup Bob Evans® Liquid Egg Whites
  • 2 tsp ground flax seed
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • ⅓ lb thinly sliced deli turkey
  • 4 slices havarti cheese
  • 2 cups baby spinach
  • 1 tomato, thinly sliced
  • ½ avocado, sliced

Instructions

  1. Preheat oven to 350°F. Process cottage cheese, egg whites, flax seed, salt, garlic powder, and pepper in a blender until smooth. Pour mixture onto a parchment paper-lined rimmed baking sheet, spreading in a thin even layer.
  2. Bake 30 to 35 minutes or until top is set and edges are golden brown. Let cool completely before removing from parchment.
  3. Arrange turkey, cheese, spinach, tomato, and avocado over center third of wrap. Roll up to completely enclose filling. Cut in half to serve.
