Sausage, White Bean, and Spinach Soup

Ingredients

  • 1 (1-lb) pkg Bob Evans® Pork Sausage Roll 
  • 1 cup chopped onion
  • 3 carrots, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 (15-oz) cans navy beans, rinsed and drained
  • 1 (32-oz) carton chicken broth, divided
  • 2 tsp dried thyme
  • 1 (5-oz) container baby spinach

Instructions

  1. Cook sausage, onion, carrots, celery, and garlic in a Dutch oven over medium heat until sausage is browned and crumbly; drain, and return to pot.
  2. Meanwhile, process one can navy beans and ½ cup broth in a blender until smooth. Add bean mixture, remaining can of beans, remaining broth, and thyme to sausage mixture. Bring to a boil, reduce heat, and simmer 15 minutes.
  3. Gradually stir in spinach until wilted. Season with salt and pepper, if desired.
