Sausage and Roasted Potato-Pepper Hash

Ingredients

  • 1 (20-oz) pkg Simply Potatoes® Diced Potatoes
  • 3 Tbsp olive oil, divided
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 (12-oz) pkg Bob Evans® Original Sausage Links
  • 6 large eggs
  • ¼ cup fresh cilantro leaves

Instructions

  1. Preheat oven to 425°F.  Toss together potatoes and 2 Tbsp oil on a lightly greased large rimmed baking sheet. Spread in a single layer and sprinkle with salt and pepper. Bake 10 minutes.
  2. Toss together peppers, onion, garlic, and 1 Tbsp oil in a large bowl; carefully add to potatoes on pan, and spread in a single layer. Bake 15 minutes longer or until potatoes are browned and tender.
  3. Meanwhile, cook sausage according to package directions; cut into 1-inch pieces and add to potato mixture. Toss.
  4. Heat a large nonstick skillet over medium heat. Coat skillet with cooking spray. Crack 3 eggs into skillet; cover and cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness. Repeat with remaining eggs.
  5. Divide potato mixture among 6 plates. Top each with a fried egg and cilantro .
