Ingredients

  • 6 Tbsp butter
  • 2 (16-oz) pkg gnocchi
  • 2 onions, sliced
  • 2 Tbsp olive oil
  • 2 cups less sodium beef broth
  • 1½ tsp dried thyme
  • ½ tsp pepper
  • 1½ cups shredded mozzarella cheese

Instructions

  1. Preheat broiler. Melt 3 Tbsp butter in a large cast-iron or ovenproof skillet. Spread 1 package of gnocchi in a single layer in skillet; cook, stirring occasionally, 8 minutes or until toasted on all sides. Remove from skillet. Repeat procedure with remaining butter and gnocchi. .
  2. Cook onions in hot oil in same skillet over medium heat 15 to 20 minutes or until tender and browned. Add broth; bring to a boil, reduce heat, and simmer 5 minutes.
  3. Add toasted gnocchi, thyme, and pepper; sprinkle with cheese. Broil 2 to 3 minutes or until cheese is melted.

  • 2 Tbsp olive oil
  • 1 (16-oz) pkg chopped kale
  • 2 Tbsp white wine vinegar
  • ½ tsp salt

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 1 minute or until fragrant. Add kale, vinegar, and salt; cook 5 minutes or until kale wilts.
