Flank Steak Bowls

Ingredients

  • ¾ lb flank steak
  • 1 Tbsp olive oil
  • ½ Tbsp Montreal steak seasoning
  • 1 (8.8-oz) pouch microwavable long grain white rice
  • 2 Tbsp chopped fresh cilantro
  • 1 (15-oz) can Ranch style beans
  • ½ cup shredded Cheddar cheese 
  • ½ (11-oz) bag tortilla chips
  • ½ cup refrigerated salsa

Instructions

  1. Cook steak in hot oil in a large cast iron skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Let stand 5 minutes; slice steak.
  2. Meanwhile, heat rice according to package directions. Toss rice with cilantro. Season with salt and pepper, if desired.
  3. Heat beans in a saucepan over medium heat.
  4. Arrange steak, rice, beans, cheese, and chips in bowls. Top with salsa.

  • 1 (8-oz) tub homestyle guacamole

  1. Serve guacamole with bowls.
