Cajun Chicken Pasta

Ingredients

  • 1 (9-oz) pkg refrigerated linguine
  • ¼ cup butter, divided
  • ¾ lb boneless, skinless chicken breasts, sliced
  • ½ Tbsp Cajun seasoning
  • 1 (8-oz) pkg sliced mushrooms
  • ½ (20-oz) pkg frozen pepper and onion blend, thawed and drained
  • ¾ cup heavy cream
  • 1 tsp dried basil
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain well.
  2. Meanwhile, melt 2 Tbsp butter in a large nonstick skillet over medium-high heat. Add chicken; sprinkle with seasoning. Cook 5 to 6 minutes or until chicken is done, stirring occasionally. Remove chicken from skillet; keep warm.
  3. Melt remaining 2 Tbsp butter in skillet. Add mushrooms, and pepper and onion blend; cook over medium-high heat 5 minutes.
  4. Add cream and basil to skillet. Cook over medium-high heat 5 minutes or until slightly thickened. Return chicken to skillet; cook 2 minutes.
  5. Toss together chicken mixture, hot cooked pasta, and cheese.

  1. Bake breadsticks according to package directions.
