Cajun Chicken Pasta
Garlic Breadsticks
Ingredients
- 1 (9-oz) pkg refrigerated linguine
- ¼ cup butter, divided
- ¾ lb boneless, skinless chicken breasts, sliced
- ½ Tbsp Cajun seasoning
- 1 (8-oz) pkg sliced mushrooms
- ½ (20-oz) pkg frozen pepper and onion blend, thawed and drained
- ¾ cup heavy cream
- 1 tsp dried basil
- ¾ cup shredded Parmesan cheese
Instructions
- Cook pasta according to package directions; drain well.
- Meanwhile, melt 2 Tbsp butter in a large nonstick skillet over medium-high heat. Add chicken; sprinkle with seasoning. Cook 5 to 6 minutes or until chicken is done, stirring occasionally. Remove chicken from skillet; keep warm.
- Melt remaining 2 Tbsp butter in skillet. Add mushrooms, and pepper and onion blend; cook over medium-high heat 5 minutes.
- Add cream and basil to skillet. Cook over medium-high heat 5 minutes or until slightly thickened. Return chicken to skillet; cook 2 minutes.
- Toss together chicken mixture, hot cooked pasta, and cheese.
