Ingredients
- 1 (10-oz) pkg frozen chopped spinach, thawed
- 1 cup shredded part skim mozzarella cheese
- ¾ cup crumbled feta cheese
- 6 Tbsp reduced fat mayonnaise, divided
- 2 tsp chopped fresh oregano
- ¼ tsp crushed red pepper
- 8 (1-oz) slices multigrain bread
- 2 tsp honey, warmed
Instructions
- Squeeze spinach dry using paper towels. Combine spinach, both cheeses, 2 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
- Top 4 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with 4 Tbsp mayonnaise.
- Cook sandwiches, in batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese melts. Drizzle honey on sandwiches.

- 2 tomatoes, sliced
- 2 Tbsp balsamic vinegar
- 1 Tbsp fresh oregano leaves
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Arrange tomato slices on a plate. Drizzle with vinegar; sprinkle with oregano, salt, and pepper.
