Ingredients

  • 1 (10-oz) pkg frozen chopped spinach, thawed
  • 1 cup shredded part skim mozzarella cheese
  • ¾ cup crumbled feta cheese
  • 6 Tbsp reduced fat mayonnaise, divided
  • 2 tsp chopped fresh oregano
  • ¼ tsp crushed red pepper
  • 8 (1-oz) slices multigrain bread
  • 2 tsp honey, warmed

Instructions

  1. Squeeze spinach dry using paper towels. Combine spinach, both cheeses, 2 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
  2. Top 4 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with 4 Tbsp mayonnaise.
  3. Cook sandwiches, in batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese melts. Drizzle honey on sandwiches.

  • 2 tomatoes, sliced
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp fresh oregano leaves
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Arrange tomato slices on a plate. Drizzle with vinegar; sprinkle with oregano, salt, and pepper.
