Ramen Stir Fry

Ingredients

  • 3 (3-oz) pkg ramen noodles
  • 2 Tbsp hoisin sauce
  • 1 Tbsp less sodium soy sauce
  • 2 tsp natural rice vinegar
  • ½ tsp honey
  • 2 cloves garlic, minced
  • ¾ lb ground beef
  • 3 cups tricolor coleslaw
  • 2 green onions, chopped
  • Crushed red pepper, optional

Instructions

  1. Prepare noodles according to package directions without seasoning packets. Combine hoisin, soy sauce, rice vinegar, honey, and garlic in a small bowl.
  2. Meanwhile, cook beef in a skillet over medium-high heat until brown and crumbly; drain and return to skillet. Stir in slaw and hoisin mixture; reduce heat to medium, and cook 4 minutes or until vegetables are tender.
  3. Toss noodles with beef mixture. Sprinkle with onions and, if desired, red pepper.
