Summer Green Goddess Salad

Ingredients

  • 2 ears corn, shucked and halved crosswise
  • 2 heads Bibb lettuce, torn
  • 1 (10-oz) pkg zucchini spirals
  • 4 hard cooked eggs, sliced
  • 1 avocado, sliced
  • 8 radishes, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh dill
  • ⅓ cup green goddess dressing

Instructions

  1.  Bring 6 cups water to a boil in a large saucepan; add corn and cook 3 to 4 minutes or until tender. Cool and cut kernels from corn; discard cobs.
  2. Divide lettuce among 4 plates; top with zucchini, corn, eggs, avocado, radishes, cheese, and dill. Drizzle with dressing.

Side Dish Ingredients

  • 1 flax, oat bran, and whole wheat flatbread, cut into triangles
  • 1 Tbsp olive oil
  • 2 tsp everything bagel seasoning

Side Dish Instructions

  1. Preheat broiler. Place flatbread on a lightly greased foil-lined baking sheet. Brush with oil, and sprinkle with seasoning.
  2. Broil 1 minute or until toasted and crisp.
