Summer Green Goddess Salad
Everything Flatbread ChipsIngredients
- 2 ears corn, shucked and halved crosswise
- 2 heads Bibb lettuce, torn
- 1 (10-oz) pkg zucchini spirals
- 4 hard cooked eggs, sliced
- 1 avocado, sliced
- 8 radishes, thinly sliced
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh dill
- ⅓ cup green goddess dressing
Instructions
- Bring 6 cups water to a boil in a large saucepan; add corn and cook 3 to 4 minutes or until tender. Cool and cut kernels from corn; discard cobs.
- Divide lettuce among 4 plates; top with zucchini, corn, eggs, avocado, radishes, cheese, and dill. Drizzle with dressing.
Side Dish Ingredients
- 1 flax, oat bran, and whole wheat flatbread, cut into triangles
- 1 Tbsp olive oil
- 2 tsp everything bagel seasoning
Side Dish Instructions
- Preheat broiler. Place flatbread on a lightly greased foil-lined baking sheet. Brush with oil, and sprinkle with seasoning.
- Broil 1 minute or until toasted and crisp.
