Ingredients

  • 3 cups shredded rotisserie chicken
  • 1 (8-oz) pkg fresh mozzarella pearls
  • 1 (2.25-oz) can sliced black olives, drained
  • 1 cup diced celery
  • 1 cup refrigerated lemon vinaigrette
  • 6 large tomatoes

Instructions

  1. Toss together chicken, cheese, olives, celery, and vinaigrette in a large bowl .
  2. Using a spoon, hollow out tomatoes, leaving a ½-inch-thick shell. Spoon chicken mixture into hollowed-out tomatoes to serve.

  • 3 hard cooked eggs, quartered
  • ½ red onion, thinly sliced
  • ½ cup slivered almonds
  • ½ cup refrigerated lemon vinaigrette
