Ingredients
- 3 cups shredded rotisserie chicken
- 1 (8-oz) pkg fresh mozzarella pearls
- 1 (2.25-oz) can sliced black olives, drained
- 1 cup diced celery
- 1 cup refrigerated lemon vinaigrette
- 6 large tomatoes
Instructions
- Toss together chicken, cheese, olives, celery, and vinaigrette in a large bowl .
- Using a spoon, hollow out tomatoes, leaving a ½-inch-thick shell. Spoon chicken mixture into hollowed-out tomatoes to serve.

- 3 hard cooked eggs, quartered
- ½ red onion, thinly sliced
- ½ cup slivered almonds
- ½ cup refrigerated lemon vinaigrette
