Ingredients
- ¾ lb boneless, skinless chicken breasts
- 2 tsp olive oil
- ¼ cup heavy cream
- 3 Tbsp light Caesar dressing
Instructions
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle lightly with salt and pepper, if desired.
- Cook chicken in hot oil in a large skillet over medium heat 5 to 6 minutes per side or until done. Add cream and dressing; cook 4 minutes or until sauce is thickened.

- 1 (8-oz) pkg trimmed asparagus
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (24-oz) carton refrigerated mashed potatoes
- 2 tsp minced garlic
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 minutes or until tender; drain.
- Add sour cream, garlic, and ⅛ tsp each salt and pepper. Mash with a potato masher to desired consistency.
- Meanwhile, steam asparagus according to package directions. Toss with ⅛ tsp each salt and pepper.
