Steak and Vegetable Couscous

Ingredients

  • 1½ lb skirt steak, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups Israeli couscous
  • ¾ cup kalamata or green olives
  • ¾ cup roasted red bell peppers in oil, drained and sliced
  • ¾ cup crumbled feta cheese
  • ½ cup olive oil vinaigrette
  • ½ cup chopped fresh parsley

Instructions

  1. Preheat broiler. Place steak on a rimmed baking sheet; sprinkle steak with salt and pepper. Broil 5 minutes per side or until desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  2. Meanwhile, cook couscous according to package directions. Stir in olives, peppers, cheese, vinaigrette, and parsley. Serve steak with couscous.
