Chili-Lime Pork Tenderloin
Mashed Potatoes and Green Beans
Ingredients
- 1½ Tbsp olive oil, divided
- ½ Tbsp lime juice
- 1 tsp chili powder
- ¼ tsp ground cumin
- 1 (1-lb) pork tenderloin, trimmed
- ¼ cup crumbled queso fresco
Instructions
- Preheat oven to 400°F. Combine 1 Tbsp oil, lime juice, chili powder, and cumin; rub all over pork.
- Brown pork in a large ovenproof skillet in ½ Tbsp hot oil over medium-high heat 8 to 10 minutes or until browned on all sides, turning often.
- Transfer skillet to oven. Bake 10 to 12 minutes or until a meat thermometer inserted in thickest portion reads 145°F. Let stand 5 minutes before slicing. Sprinkle with cheese.

- ½ (12-oz) pkg frozen green beans
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper

- Cook mashed potatoes and green beans according to package directions. Toss beans with garlic powder, salt, and pepper.
