Pineapple-Avocado Chicken Sausage

Ingredients
- 1 (11-oz) pkg fully cooked Italian chicken sausage links, cut into ½ inch thick slices
- 1 Tbsp olive oil, divided
- ½ onion, finely chopped
- ⅛ tsp salt
- 1 cup pineapple chunks
- 1 small avocado, diced
Instructions
- Cook sausage ½ Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet, reserving drippings in skillet.
- Heat ½ Tbsp oil with hot drippings in skillet. Add onion and salt; cook 5 minutes. Add sausage and pineapple; cook 2 to 3 minutes or until thoroughly heated. Stir in avocado.

- 3 Tbsp olive oil
- ½ Tbsp orange juice
- ¼ tsp Dijon mustard
- ¼ tsp salt
- 1 (5-oz) pkg baby spinach
- 1 carrot, shredded
Side Dish Instructions
- Whisk together oil, orange juice, mustard, and salt in a bowl. Add spinach and carrot; toss.
