Roast Beef Baguettes
Orange-Avocado TossIngredients
- 5 radishes, thinly sliced
- ¼ cup sour cream
- ¼ tsp white wine vinegar
- ¼ tsp salt
- ½ tsp pepper
- 2 dashes of hot sauce
- 1 cup spring mix
- 1 (9-oz) multigrain French baguette, halved lengthwise
- ½ lb thin deli sliced roast beef
Instructions
- Toss together radishes, sour cream, vinegar, salt, pepper, and hot sauce in a bowl.
- Layer spring mix on bottom half of baguette. Top with roast beef and radish mixture.
- Cut into 4 equal portions, and wrap tightly in plastic wrap or foil.

- 1 Tbsp lemon juice
- ¼ tsp salt
- 3 navel oranges, peeled and sectioned
- 1 small avocado, diced
Side Dish Instructions
- Gently toss together all ingredients in a medium bowl.
