Chicken Fried Rice Bowls

Ingredients

  • 2 (8.8-oz) pouches microwavable long grain white rice
  • 1 red bell pepper, chopped
  • 1 cup shredded carrots
  • 1 cup frozen peas
  • 2 Tbsp minced garlic
  • 1 Tbsp refrigerated ginger paste
  • 1 Tbsp vegetable oil
  • 3 cups shredded rotisserie chicken
  • ¼ cup soy sauce
  • 2 tsp sesame oil

Instructions

  1. Cook rice according to package directions; cool completely. Chill rice, if time allows.
  2. Cook bell pepper, carrots, peas, garlic, and ginger in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until crisp-tender. Stir in chicken, cooled rice, soy sauce, and sesame oil.
  3. Cook, stirring, 2 to 3 minutes or until thoroughly heated. Season with salt and pepper, if desired.
  4. Serve in bowls with additional soy sauce.
