Chicken Fried Rice Bowls

Ingredients
- 2 (8.8-oz) pouches microwavable long grain white rice
- 1 red bell pepper, chopped
- 1 cup shredded carrots
- 1 cup frozen peas
- 2 Tbsp minced garlic
- 1 Tbsp refrigerated ginger paste
- 1 Tbsp vegetable oil
- 3 cups shredded rotisserie chicken
- ¼ cup soy sauce
- 2 tsp sesame oil
Instructions
- Cook rice according to package directions; cool completely. Chill rice, if time allows.
- Cook bell pepper, carrots, peas, garlic, and ginger in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until crisp-tender. Stir in chicken, cooled rice, soy sauce, and sesame oil.
- Cook, stirring, 2 to 3 minutes or until thoroughly heated. Season with salt and pepper, if desired.
- Serve in bowls with additional soy sauce.
