Oven Braised Green Beans with Bacon

Ingredients

  • 8 slices bacon, chopped
  • ⅔ cup chicken broth
  • 3 Tbsp apple cider vinegar
  • 4 cloves garlic, thinly sliced
  • ½ tsp honey
  • 2 lb green beans, trimmed 
  • 2 tomatoes, chopped

Instructions

  1. Preheat oven to 400°F. Cook bacon in a large cast-iron skillet over medium-high heat 5 to 7 minutes or until crisp. Drain bacon on paper towels, reserving drippings in skillet.
  2. Add broth, vinegar, garlic, and honey to skillet. Add green beans and tomatoes; toss.
  3. Transfer skillet to oven; cover, and bake 30 to 40 minutes or until green beans are tender. Season with pepper, if desired. Sprinkle with bacon before serving.
