Lemon-Caper Shrimp
Sweet Pea OrzoIngredients
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ¾ lb peeled and deveined, large raw shrimp
- 1 Tbsp capers
- 1 Tbsp lemon juice
Instructions
- Sauté garlic in hot oil in a skillet 1 minute. Add shrimp, capers, and lemon juice; sauté 2 to 3 minutes per side or until shrimp are done.

- ⅓ cup orzo
- ⅔ cup frozen green peas
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ½ lemon
- ⅓ cup freshly grated Parmesan cheese
Side Dish Instructions
- Cook pasta according to package directions.
- Meanwhile, cook peas and garlic in hot oil in a skillet over medium-high heat 5 to 7 minutes or until peas are tender.
- Grate zest and squeeze juice from lemon half. Add lemon zest, lemon juice, orzo, and cheese to peas in skillet; toss to combine.
