Chicken Kofta Bowls
Garlic Hummus CrispbreadIngredients
- 1½ lb ground chicken
- ½ cup chopped onion
- ¼ cup chopped fresh parsley
- 2 Tbsp chopped fresh mint
- 2 tsp salt free Greek seasoning
- ¼ tsp salt
- 2 (12-oz) pkg frozen riced cauliflower
- 1 (9-oz) pkg chopped romaine lettuce
- 1 English cucumber, sliced
- ¾ cup roasted red peppers, sliced
- ½ cup pitted kalamata olives
Instructions
- Preheat grill or grill pan to medium-high heat. Gently mix together chicken, onion, parsley, mint, seasoning, and salt in a large bowl using your hands.
- Shape mixture into 12 oblong patties; thread onto metal or soaked bamboo skewers. Coat patties with cooking spray.
- Grill 6 to 8 minutes or until done, turning occasionally.
- Cook cauliflower rice according to package directions. Divide lettuce and cauliflower rice among 6 bowls. Top with cucumber, roasted red peppers, olives, and kabobs.
Side Dish Ingredients
- ¾ cup roasted garlic hummus
- 6 slices multigrain crispbread
- 2 Tbsp chopped fresh rosemary
Side Dish Instructions
- Spread hummus on each crispbread slice; sprinkle with rosemary.
