Chicken Kofta Bowls

Garlic Hummus Crispbread

Ingredients

  • 1½ lb ground chicken
  • ½ cup chopped onion
  • ¼ cup chopped fresh parsley
  • 2 Tbsp chopped fresh mint
  • 2 tsp salt free Greek seasoning
  • ¼ tsp salt
  • 2 (12-oz) pkg frozen riced cauliflower
  • 1 (9-oz) pkg chopped romaine lettuce
  • 1 English cucumber, sliced
  • ¾ cup roasted red peppers, sliced
  • ½ cup pitted kalamata olives

Instructions

  1. Preheat grill or grill pan to medium-high heat. Gently mix together chicken, onion, parsley, mint, seasoning, and salt in a large bowl using your hands.
  2. Shape mixture into 12 oblong patties; thread onto metal or soaked bamboo skewers. Coat patties with cooking spray.
  3. Grill 6 to 8 minutes or until done, turning occasionally.
  4. Cook cauliflower rice according to package directions. Divide lettuce and cauliflower rice among 6 bowls. Top with cucumber, roasted red peppers, olives, and kabobs.

Side Dish Ingredients

  • ¾ cup roasted garlic hummus
  • 6 slices multigrain crispbread
  • 2 Tbsp chopped fresh rosemary

Side Dish Instructions

  1. Spread hummus on each crispbread slice; sprinkle with rosemary.
