Ancho Chile Pot Roast
Arugula Salad with JicamaIngredients
- 2 large dried ancho chile peppers
- ¼ cup boiling water
- 1 lb boneless chuck roast
- 1 Tbsp avocado oil
- ½ onion, chopped
- 2 cloves garlic, minced
- 1 lb sweet potatoes, cut into 2 inch chunks
- 1½ cups organic beef bone broth
- 4 sprigs fresh thyme
- 1 bay leaf
- ¾ tsp arrowroot
- 2 tsp water
- 2 Tbsp chopped fresh parsley
Instructions
- Remove stems and seeds from chiles. Soak chiles in boiling water 20 minutes. Process chiles and water in a food processor or blender until smooth, scraping sides as needed.
- Meanwhile, sprinkle roast lightly with salt and pepper, if desired. Cook in hot oil in a large skillet over medium-high heat 20 minutes or until browned on all sides. Transfer to a 5- or 6-quart slow cooker.
- Add onion and garlic to skillet; cook 5 minutes. Add potatoes, onion mixture, chile puree, broth, thyme, and bay leaves to cooker.
- Cover and cook on LOW 6 to 8 hours or until tender. Remove roast from cooker; keep warm. Discard thyme sprigs and bay leaves.
- Whisk together arrowroot and 1 Tbsp water; add to cooker. Cook, uncovered, on HIGH 15 minutes or until thickened.
- Slice roast, and serve with potato mixture. Sprinkle with parsley.
Side Dish Ingredients
- 2 Tbsp shelled raw pepitas
- 2 Tbsp olive oil
- 2 tsp fresh orange juice
- 2 tsp fresh lime juice
- 2 tsp apple cider vinegar
- 2 tsp raw honey
- ¼ tsp orange zest
- ⅛ tsp salt
- ½ (5-oz) pkg arugula
- ½ red bell pepper, thinly sliced
- 1 jicama, cut into matchstick pieces
Side Dish Instructions
- Toast pepitas in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
- Whisk together oil, orange juice, lime juice, vinegar, honey, orange zest, and salt in a bowl. Add arugula, bell pepper, jicama, and pepitas; toss.
