Ingredients
- 1½ lb ground beef
- 1 Tbsp taco seasoning
- 12 soft taco flour tortillas
- 2 (8-oz) pkg shredded Mexican blend cheese
- ¼ cup olive oil
- 1 (16-oz) container guacamole
Instructions
- Cook beef in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet. Stir in seasoning. Cook, stirring, 3 minutes.
- Brush one side of tortillas with oil; place, oiled sides down, on a large rimmed baking sheet.
- Spoon about ½ cup beef mixture on 1 side of each tortilla; sprinkle each with about ⅓ cup cheese. Fold sides of each tortilla over filling.
- Bake 6 minutes, and flip. Bake 6 to 7 minutes longer or until tortillas are browned and cheese melts.
- Cut into wedges, and serve with guacamole.

- 1 (16-oz) container pico de gallo
- 1 (15-oz) can black beans, drained and rinsed
Side Dish Instructions
- Combine pico de gallo and beans in a bowl; serve with quesadillas.
