Pecan-Grape Chicken Salad

Ingredients

  • ¼ cup chopped pecans
  • 1 cup chopped rotisserie chicken 
  • ¼ cup reduced fat olive oil mayonnaise
  • ½ tsp curry powder
  • ⅛ tsp salt
  • ½ cup chopped celery
  • ½ cup seedless red grapes, halved
  • 4 Bibb lettuce leaves

Instructions

  1. Toast nuts in a small dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
  2. Combine nuts, chicken, mayonnaise, curry powder, and salt in a large bowl; stir in celery and grapes. Serve over lettuce.
