Beef and Vegetable Noodle Bowls

Ingredients

  • 1 (14-oz) pkg rice noodles
  • 1½ lb ground beef
  • 1 (8-oz) pkg sliced mushrooms
  • 1 onion, sliced
  • 2 cups shredded carrots
  • 6 Tbsp less sodium soy sauce
  • 2 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 Tbsp brown sugar
  • 6 cloves garlic, minced
  • 3 green onions, sliced

Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, cook beef in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Drain beef, set aside, and keep warm.
  3. Cook mushrooms, onion, and carrots in the same skillet over medium-high heat 5 minutes or until tender.
  4. Stir together soy sauce, oil, honey, brown sugar, and garlic. Add soy sauce mixture and beef to skillet; cook 3 minutes, stirring to coat, or until thoroughly heated. Serve beef and vegetable mixture over noodles; sprinkle with green onions.
