Chicken with Cilantro-Bell Pepper Sauce

Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
- 1 onion, cut into wedges
- 1 green bell pepper, cut into quarters
- ¾ cup chopped fresh cilantro
- ½ cup mayonnaise
- 2 Tbsp lime juice
- 6 cloves garlic
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, process onion, bell pepper, cilantro, mayonnaise, lime juice, and garlic in a food processor until smooth. Add water, 1 Tbsp at a time if needed, to reach a pourable consistency. Serve sauce with chicken.
