Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil
  • 1 onion, cut into wedges
  • 1 green bell pepper, cut into quarters
  • ¾ cup chopped fresh cilantro
  • ½ cup mayonnaise
  • 2 Tbsp lime juice
  • 6 cloves garlic

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Meanwhile, process onion, bell pepper, cilantro, mayonnaise, lime juice, and garlic in a food processor until smooth. Add water, 1 Tbsp at a time if needed, to reach a pourable consistency. Serve sauce with chicken.
