Ingredients

  • 2 lb boneless, skinless chicken thighs
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 Tbsp olive oil
  • 1 cup fresh cilantro leaves
  • 3 green onions, roughly chopped
  • 3 cloves garlic
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp lime juice

Instructions

  1. Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Meanwhile, add cilantro, green onions, garlic, mayonnaise, sour cream, lime juice, and ½ tsp each salt and pepper to a blender or food processor; puree until smooth. Serve sauce over chicken.

  • 1 (12-oz) pkg frozen corn kernels
  • 1 (12-oz) pkg frozen baby lima beans
  • ¾ cup chopped red onion
  • ¼ cup olive oil, divided
  • 2 limes
  • 1 pint grape tomatoes, halved
  • 1 cup crumbled queso fresco
  • ¼ cup chopped fresh cilantro
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook corn, lima beans, and onion in 2 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until lightly browned and tender.
  2. Grate zest and squeeze juice from limes. Toss together lime zest, lime juice, corn mixture, tomatoes, cheese, cilantro, 2 Tbsp oil, salt, and pepper in a large bowl.
