Green Sauce Chicken
Chopped Salad
Ingredients
- 2 lb boneless, skinless chicken thighs
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 Tbsp olive oil
- 1 cup fresh cilantro leaves
- 3 green onions, roughly chopped
- 3 cloves garlic
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 Tbsp lime juice
Instructions
- Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, add cilantro, green onions, garlic, mayonnaise, sour cream, lime juice, and ½ tsp each salt and pepper to a blender or food processor; puree until smooth. Serve sauce over chicken.
Side Dish Ingredients
- 1 (12-oz) pkg frozen corn kernels
- 1 (12-oz) pkg frozen baby lima beans
- ¾ cup chopped red onion
- ¼ cup olive oil, divided
- 2 limes
- 1 pint grape tomatoes, halved
- 1 cup crumbled queso fresco
- ¼ cup chopped fresh cilantro
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook corn, lima beans, and onion in 2 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until lightly browned and tender.
- Grate zest and squeeze juice from limes. Toss together lime zest, lime juice, corn mixture, tomatoes, cheese, cilantro, 2 Tbsp oil, salt, and pepper in a large bowl.
