Grilled Grouper with Pineapple Salsa

Ingredients

  • 1 peeled and cored pineapple
  • 2 red bell peppers, minced
  • 2 jalapeño peppers, seeded and minced
  • 3 green onions, minced
  • 1 Tbsp chopped fresh cilantro
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 tsp honey
  • 2 Tbsp olive oil
  • 8 (6-oz) grouper fillets
  • 3 Tbsp blackened seasoning

Instructions

  1. Stir together first 8 ingredients in a large bowl. Cover and refrigerate 1 hour or up to 3 days.
  2. Meanwhile, preheat grill or grill pan to medium-high heat; brush grill grate with 2 Tbsp oil.
  3. Sprinkle fish all over with seasoning. Grill, covered, 3 to 4 minutes per side (depending upon thickness of fish), until fish flakes with a fork.
  4. Serve fish over Coconut-Ginger Rice recipe; top with pineapple salsa.
