Grilled Grouper with Pineapple Salsa

Ingredients
- 1 peeled and cored pineapple
- 2 red bell peppers, minced
- 2 jalapeño peppers, seeded and minced
- 3 green onions, minced
- 1 Tbsp chopped fresh cilantro
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 1 tsp honey
- 2 Tbsp olive oil
- 8 (6-oz) grouper fillets
- 3 Tbsp blackened seasoning
Instructions
- Stir together first 8 ingredients in a large bowl. Cover and refrigerate 1 hour or up to 3 days.
- Meanwhile, preheat grill or grill pan to medium-high heat; brush grill grate with 2 Tbsp oil.
- Sprinkle fish all over with seasoning. Grill, covered, 3 to 4 minutes per side (depending upon thickness of fish), until fish flakes with a fork.
- Serve fish over Coconut-Ginger Rice recipe; top with pineapple salsa.
