Mango-Jicama Salad

Ingredients
- ¼ cup olive oil
- 2 Tbsp champagne vinegar
- 2 Tbsp lime juice
- 2 Tbsp minced fresh cilantro
- 1 Tbsp honey
- 1 (10-oz) pkg spring mix
- 3 mangoes, peeled, pitted, and sliced
- 1 jicama, peeled and cut into matchsticks
- ½ red onion, thinly sliced
- 1 (8-oz) can cashew halves
Instructions
- Whisk together oil, vinegar, lime juice, cilantro, and honey in a large bowl.
- Add spring mix, mangoes, jicama, onion, and nuts; toss. Season with salt and pepper, if desired. Serve immediately.
