Ingredients

  • ¼ cup olive oil
  • 2 Tbsp champagne vinegar
  • 2 Tbsp lime juice
  • 2 Tbsp minced fresh cilantro
  • 1 Tbsp honey
  • 1 (10-oz) pkg spring mix
  • 3 mangoes, peeled, pitted, and sliced
  • 1 jicama, peeled and cut into matchsticks
  • ½ red onion, thinly sliced
  • 1 (8-oz) can cashew halves

Instructions

  1. Whisk together oil, vinegar, lime juice, cilantro, and honey in a large bowl.
  2. Add spring mix, mangoes, jicama, onion, and nuts; toss. Season with salt and pepper, if desired. Serve immediately.
