Ingredients
- 1 (16-oz) pkg orzo
- 3 Tbsp minced garlic
- 1 Tbsp olive oil
- 6 oz cream cheese, cut into pieces
- 1½ cups shredded Parmesan cheese, divided
- 1 tsp Italian seasoning
- ½ tsp crushed red pepper
- ½ tsp salt
- ½ tsp black pepper
- 3 cups spinach
- 1 cup French fried onions, crushed
Instructions
- Cook orzo according to package directions, reserving 1½ cups pasta water.
- Meanwhile, cook garlic in hot oil in a large skillet over medium heat 1 minute or until fragrant. Stir in cream cheese, 1 cup Parmesan cheese, 1 cup pasta water, Italian seasoning, red pepper, salt, and black pepper until combined. Add spinach; cook until wilted.
- Stir in orzo, stirring to combine. Add in additional pasta water, if needed, to thin the sauce to desired consistency. Sprinkle with ½ cup Parmesan cheese and crushed fried onions.
