Ingredients

  • 12 oz fettuccine
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ lb ground sirloin
  • ½ tsp salt
  • 1 (24-oz) jar marinara sauce

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook onion, carrot, celery, and garlic in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until tender.
  3. Add beef and salt; cook 3 to 4 minutes. Add sauce, reduce heat to medium, and cook 5 to 6 minutes or until beef is browned and crumbly. Toss with pasta.

  • 6 cups arugula
  • ½ cup sweetened dried cranberries
  • ⅓ cup chopped walnuts
  • ⅓ cup olive oil vinaigrette

  1. Toss together all ingredients in a large bowl.
