Easy Beef Bolognese
Cranberry-Walnut Arugula Salad

Ingredients
- 12 oz fettuccine
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 stalk celery, finely chopped
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ lb ground sirloin
- ½ tsp salt
- 1 (24-oz) jar marinara sauce
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook onion, carrot, celery, and garlic in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until tender.
- Add beef and salt; cook 3 to 4 minutes. Add sauce, reduce heat to medium, and cook 5 to 6 minutes or until beef is browned and crumbly. Toss with pasta.
Side Dish Ingredients
- 6 cups arugula
- ½ cup sweetened dried cranberries
- ⅓ cup chopped walnuts
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
