Ingredients
- 2 (6.9-oz) pkg chicken flavored rice mix
- 3 Tbsp butter
- 1½ lb boneless, skinless chicken breasts, cut into bite size pieces
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 tsp garlic powder
- 1 tsp pepper
- 1 (8-oz) block mozzarella cheese, shredded
Instructions
- Prepare rice according to package directions.
- Meanwhile, melt butter in a large skillet over medium heat. Add chicken, bell pepper, onion, garlic powder, and pepper; cook, stirring occasionally, 5 to 6 minutes or until chicken is done and vegetables are tender.
- Stir rice into chicken mixture. Sprinkle with cheese; cover and cook 2 minutes or until cheese melts.

- ½ cup olive oil vinaigrette
Side Dish Instructions
- Toss together spinach and vinaigrette in a large bowl.
