Creamy Caesar Chicken
Garlic Mashed Potatoes and Asparagus

Ingredients
- 2¼ lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- ¾ cup heavy cream
- ½ cup light Caesar dressing
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper, if desired.
- Cook chicken, in batches if necessary, in hot oil in a large skillet over medium heat 5 to 6 minutes per side or until done. Add cream and dressing to skillet; cook 4 minutes or until sauce is thickened.

- 2 (8-oz) pkg trimmed asparagus
- ¼ tsp salt
- ¼ tsp pepper
- 1 (32-oz) carton refrigerated mashed potatoes
- 2 Tbsp minced garlic
Side Dish Instructions
- Steam asparagus according to package directions. Toss with salt and pepper.
- Heat potatoes according to package directions. Stir garlic into mashed potatoes.
