Ingredients

  • 2¼ lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ¾ cup heavy cream
  • ½ cup light Caesar dressing

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with salt and pepper, if desired.
  2. Cook chicken, in batches if necessary, in hot oil in a large skillet over medium heat 5 to 6 minutes per side or until done. Add cream and dressing to skillet; cook 4 minutes or until sauce is thickened.

  • 2 (8-oz) pkg trimmed asparagus
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (32-oz) carton refrigerated mashed potatoes
  • 2 Tbsp minced garlic

Side Dish Instructions

  1. Steam asparagus according to package directions. Toss with salt and pepper.
  2. Heat potatoes according to package directions. Stir garlic into mashed potatoes.
