Beefy Tomato Soup

Ingredients

  • 1 lb ground beef
  • ½ (8-oz) block cream cheese, softened
  • 1 (24-oz) jar marinara sauce 
  • 1 (32-oz) carton chicken broth 
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1½ cups small shell pasta 

Instructions

  1. Cook beef in a large Dutch oven over medium heat until browned and crumbly; drain, and return to pot.
  2. Add cream cheese, stirring until melted. Add marinara sauce, broth, and seasonings; bring to a boil, stir in pasta, reduce heat, and simmer 10 minutes or until pasta is tender. Season with salt and pepper, if desired.

Side Dish Ingredients

  • ½ (14-oz) loaf French bread, halved lengthwise
  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • ¼ tsp Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Cheddar cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Arrange bread on a baking sheet.
  2. Mix together mayonnaise and all remaining ingredients Spread on cut sides of bread. Bake 10 to 15 minutes or until cheese melts and bread is toasted. Slice to serve.
