Ingredients

  • 2 cups crushed tortilla chips, divided
  • 2 lb boneless, skinless chicken breasts, chopped
  • 1 (14.5-oz) can diced tomatoes with green chiles, drained
  • 2 (10.5-oz) cans cream of chicken soup
  • 1 onion, chopped
  • 1 Tbsp ground cumin
  • 1 (8-oz) pkg shredded Cheddar cheese, divided

Instructions

  1. Sprinkle 1 cup tortilla chips in a lightly greased 5- to 7-quart slow cooker. Top with chicken.
  2. Stir together tomatoes, soup, onion, cumin, and 1 cup cheese. Pour over chicken; sprinkle with remaining chips and 1 cup cheese. Cover and cook on LOW 8 hours.

Side Dish Ingredients

  • ½ cup Ranch dressing
  • 1 tsp chili powder
  • 1 (3-count) pkg hearts of romaine lettuce
  • 1 tomato, chopped
  • 1 avocado, diced

Side Dish Instructions

  1. Stir together salad dressing and chili powder in a small bowl.
  2. Cut each romaine heart in half lengthwise. Divide among plates; top with tomato and avocado. Serve with dressing.
