Lemon-Oregano Salmon

Ingredients

  • 2¼ lb salmon fillets
  • ½ tsp salt
  • 2 Tbsp olive oil, divided
  • 1 lemon
  • 1 Tbsp chopped fresh oregano

Instructions

  1. Sprinkle fish with salt and, if desired, pepper. Cook fish in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or to desired doneness.
  2. Grate zest and squeeze juice from lemon. Stir together lemon zest, lemon juice, 1 Tbsp oil, and oregano in a small bowl. Spoon over fish.

  • 8 oz orzo
  • 2 zucchini, thinly sliced
  • 1 cup halved grape tomatoes
  • ½ cup Greek vinaigrette
  • ¼ cup chopped fresh basil
  • ½ tsp salt

Side Dish Instructions

  1. Cook pasta according to package directions, adding zucchini during last 2 minutes of cooking; drain and rinse with cold water.
  2. Place pasta mixture in a large bowl. Add tomatoes, vinaigrette, basil, and salt; toss.
