Ingredients

  • 2 lb boneless pork chops
  • ¾ tsp salt, divided
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ⅔ cup plain whole milk Greek yogurt
  • ¼ cup chopped fresh mint
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp lime juice
  • 2 cloves garlic, minced

Instructions

  1. Sprinkle pork with ½ tsp salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  2. Meanwhile, process yogurt, mint, cilantro, lime juice, ¼ tsp salt, and garlic in a food processor or blender until smooth, adding water as needed to reach a pourable consistency.

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • ¼ cup chopped fresh cilantro
  • 1 (12-oz) pkg frozen green peas
  • 3 Tbsp butter
  • ½ tsp pepper

  1. Heat potatoes according to package directions. Stir in cilantro.
  2. Cook peas according to package directions. Stir in butter and pepper.
