Pork with Mint-Cilantro Sauce
Cilantro Mashed Potatoes and Green Peas

Ingredients
- 2 lb boneless pork chops
- ¾ tsp salt, divided
- ½ tsp pepper
- 2 Tbsp olive oil
- ⅔ cup plain whole milk Greek yogurt
- ¼ cup chopped fresh mint
- ¼ cup chopped fresh cilantro
- 2 Tbsp lime juice
- 2 cloves garlic, minced
Instructions
- Sprinkle pork with ½ tsp salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Meanwhile, process yogurt, mint, cilantro, lime juice, ¼ tsp salt, and garlic in a food processor or blender until smooth, adding water as needed to reach a pourable consistency.

- ¼ cup chopped fresh cilantro
- 1 (12-oz) pkg frozen green peas
- 3 Tbsp butter
- ½ tsp pepper

- Cook peas according to package directions. Stir in butter and pepper.
