Cherry-Balsamic Chicken Thighs
Warm Barley-Mushroom Salad

Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 2 tsp minced garlic
- 1 (13-oz) jar cherry preserves
- 3 Tbsp balsamic vinegar
- 2 tsp dried crushed rosemary
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet; keep warm.
- Add garlic to drippings in skillet; sauté 1 minute. Stir in preserves, vinegar, and rosemary; bring to a boil, and cook 5 minutes or until thickened.
- Add chicken to sauce; cover, and cook 6 to 7 minutes longer or until chicken is done.

- 1 (16-oz) pkg sliced mushrooms
- 1 Tbsp minced garlic
- 2 Tbsp olive oil
- 2 cups water
- 1 cup pearled barley
- 2 tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook mushrooms and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes or until tender.
- Add water, barley, oregano, salt, and pepper. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until tender.
