Cherry-Balsamic Chicken Thighs

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 2 tsp minced garlic
  • 1 (13-oz) jar cherry preserves
  • 3 Tbsp balsamic vinegar
  • 2 tsp dried crushed rosemary

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet; keep warm.
  2. Add garlic to drippings in skillet; sauté 1 minute. Stir in preserves, vinegar, and rosemary; bring to a boil, and cook 5 minutes or until thickened.
  3. Add chicken to sauce; cover, and cook 6 to 7 minutes longer or until chicken is done.

  • 1 (16-oz) pkg sliced mushrooms
  • 1 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 2 cups water
  • 1 cup pearled barley
  • 2 tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook mushrooms and garlic in hot oil in a Dutch oven over medium-high heat 5 minutes or until tender.
  2. Add water, barley, oregano, salt, and pepper. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until tender.
