Bacon-Vegetable Mashed Potato Bowls

Ingredients
- 12 slices center cut bacon
- 1 (20-oz) pkg frozen sugar snap pea stir fry
- ¾ cup heavy cream
- ¾ cup less sodium chicken broth
- 2 Tbsp minced garlic
- 1½ tsp dried crushed rosemary
- 1 (32-oz) pkg refrigerated mashed potatoes
Instructions
- Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Remove from skillet, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Add vegetables to drippings in skillet; cook vegetables 5 minutes. Stir in cream, broth, garlic, and rosemary; cook until thickened.
- Meanwhile, heat potatoes according to package directions. Serve vegetable mixture over potatoes; sprinkle with bacon.
