Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • 1½ lb boneless, skinless chicken breasts, cut into 1 inch pieces
  • 2 Tbsp canola oil, divided 
  • 2 cups less sodium chicken broth
  • 2 Tbsp cornstarch
  • 2 Tbsp water
  • ½ tsp pepper, divided 
  • ¾ cup shredded Swiss cheese, divided
  • ½ lb sliced low sodium honey ham
  • ¼ cup freshly grated Parmesan cheese
  • 1 cup baby arugula
  • ⅛ tsp salt 

Instructions

  1. Preheat broiler. Steam cauliflower according to package directions.
  2. Meanwhile, cook chicken in 1 Tbsp hot oil in a large cast-iron skillet over medium-high heat 8 to 10 minutes or until done. Remove from skillet.
  3. Add broth to same skillet. Stir together cornstarch and 2 Tbsp water; add cornstarch mixture and ¼ tsp pepper to skillet; cook over medium-high heat 6 to 8 minutes or until bubbly, stirring constantly. Gradually add ½ cup Swiss cheese, stirring until melted.
  4. Stir in cauliflower, chicken, and ham. Top with ¼ cup Swiss cheese and Parmesan. Broil 2 to 5 minutes or until cheese is browned.
  5. Meanwhile, toss together arugula, 1 Tbsp oil, ¼ tsp pepper, and salt in a bowl. Serve over casserole.
