Ingredients

  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • ½ cup garlic herb spreadable cheese
  • 2 lb chicken tenderloins

Instructions

  1. Preheat oven to 400°F. Combine Parmesan and breadcrumbs in a shallow bowl.
  2. Spread garlic-herb cheese over 1 side of each tenderloin; press each tenderloin into breadcrumb mixture, pressing gently to adhere.
  3. Place coated tenderloins on a greased wire rack on a rimmed baking sheet. Bake 20 minutes or until chicken is done.

  • 1 (10-oz) pkg mixed baby greens
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • ½ cup sliced almonds
  • ½ cup olive oil vinaigrette
  • 1 (32-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Toss together greens, berries, nuts, and vinaigrette in a large bowl.
  2. Meanwhile, heat potatoes according to package directions.
