Pork Chops with Red Wine Sauce

Ingredients

  • ¾ lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • ½ cup red wine
  • ⅓ cup less sodium chicken broth
  • 1 small clove garlic, minced
  • 1 tsp balsamic vinegar

Instructions

  1. Sprinkle pork with salt and pepper. Cook pork in hot oil in a skillet over medium-high heat 4 minutes per side or until done. Remove from skillet.
  2. Add wine to skillet; bring to a boil. Cook 6 minutes or until reduced by half.
  3. Add broth and garlic; return to a boil, and cook 3 minutes or until reduced by half.
  4. Return pork to skillet; add vinegar, and cook 2 minutes.

  • 2 oz yolk free egg noodles
  • 1 Tbsp olive oil
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 clove garlic, minced
  • ¼ cup chopped red onion
  • 1 zucchini, sliced

Side Dish Instructions

  1. Cook noodles according to package directions. Toss with oil, ⅛ tsp each salt and pepper, and garlic.
  2. Meanwhile, cook onion in a skillet coated with cooking spray over medium-high heat 3 minutes.
  3. Stir in zucchini and ⅛ tsp each salt and pepper; cook 5 to 7 minutes or until zucchini is tender.
