Pork Chops with Red Wine Sauce
Egg Noodles and Sautéed Zucchini

Ingredients
- ¾ lb boneless pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- ½ cup red wine
- ⅓ cup less sodium chicken broth
- 1 small clove garlic, minced
- 1 tsp balsamic vinegar
Instructions
- Sprinkle pork with salt and pepper. Cook pork in hot oil in a skillet over medium-high heat 4 minutes per side or until done. Remove from skillet.
- Add wine to skillet; bring to a boil. Cook 6 minutes or until reduced by half.
- Add broth and garlic; return to a boil, and cook 3 minutes or until reduced by half.
- Return pork to skillet; add vinegar, and cook 2 minutes.
Side Dish Ingredients
- 2 oz yolk free egg noodles
- 1 Tbsp olive oil
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 clove garlic, minced
- ¼ cup chopped red onion
- 1 zucchini, sliced
Side Dish Instructions
- Cook noodles according to package directions. Toss with oil, ⅛ tsp each salt and pepper, and garlic.
- Meanwhile, cook onion in a skillet coated with cooking spray over medium-high heat 3 minutes.
- Stir in zucchini and ⅛ tsp each salt and pepper; cook 5 to 7 minutes or until zucchini is tender.
